They believed that in times of famine, the gods were letting the people starve because they (gods) were hungry. Since blood=life they started out by just doing personal bloodletting rituals and sacrificing animals but some "genius" decided it would be best to sacrifice entire humans by ripping out their heart (which pumps the lifeblood) and offering it to the gods...with the handy side effect of being able to eat the dead bodies.
I'm not saying it was the right thing to do. Just that they did it.

I believe it was because they thought it made their Gods pleased to have human blood, or something like that.

appeaseing their Gods, and I believe also asking the sun to rise agian..but that might also be egypt
