Some teachers and Professors have softwares that they have subscribed to and that helps them to catch plagiarism. Some of them have read a lot of literature. This helps them to identify whether or if a person has copied the material or is it their original submission.

Good teachers and professors know their students well. They know their writing styles. Plus, it's pretty obvious when a usually poor student suddenly turns in a brilliant piece of work.
Also, there is Google.

We have to submit our essays and stuff through a site called turnitin.com. The site catches plagiarism on the spot.

you have to remember...teachers and professors know when something is not in your own words cause by now they know what your writing is like and plus it may look like something was just copied from a book....trust me i got in trouble for that a long time ago

mostly by knowing their students.... if said student says someting very technical, the assumption is it is copied.... then they research the given bibliography and can usually find where it was taken from.
