As a religious text, there is no mention of specific breeds or types of animal and is assumed that all animals existing today are the decendants of the creatures saved by Noah and his Ark. All other animals that did exist but no longer in this day and age were destroyed in the flood.

As a historical text, the ancient Hebrews did not know about the dinosaurs so there was no way to account for them in their stories. The large bones some times found in the deserts and fields were often declared to be the bones of demons, monsters, angels, all sorts of other-worldy creatures that were slain by ancient heroes. It is important to note that along with the holy texts, the Jewish religion has several volumes of lesser tales that, though important to their history, are not part of the story between the Hebrews and Yaweh. In one such story, God created a giant sea montser called the Leviethan that aided in the destruction of the world during the flood. After the flood, the beast became so dangerous that God trapped it in an undersea cavern (Ancient drawings of the Leviethan have been studied by schoolars and they believe it to have been an ancestor of the Sperm Whale or Whale Shark).

Dinosaurs as we known them were not recognized by the scientific community until 1822 with the discovery of the first complete skeletion of an Iquanadon by Doc. Mendel. Almost immediately more and more bones from more and more creatures were discovered all over the world and so began the clash of Religion and Science. Based on stories like the Leviethan above, Religions scholars claimed the bones to be remains of animals that lived around the time of early man and were smited by God during the flood, but the age of the bones based on basic geological and archaeological knowledge made the Scientific community rethink that.

Even the oldest of the oldest human cultures found in the Mid-East and African spoke of these creatures in a mythical way, calling to mind a time when gods wandered the earth and man was but a thought in the divine's heads. The only evidence of prehistoric creatures existing side by side with mankind was for mammialian beasts like the Mastadon, Sybertoothed cat and Perissodactyla (early horse) and those creatures did not exists until after the Ice Age.

No evidence of co-existance, no Flinstones in the eyes of the Scientific world. Much like when a child finds a bone in the woods and comes with this a fantasic story, a horrific monster, to turn this dull piece of calcium into a treasure, early humans probably did the same with ancient dinosaur bones to fit into their own culture and religious outlook on the world.

The Bible doesn't explain evolution unless you have an open mind. In Genesis, it is explained that God made the world in seven days. Another definition of a day is about 10,000 to 100,000 years. Of course it can still be debated. The Bible then tell what god made first and second and third. "And then god created the animals of the sea, ....the land.....the sky" If you look at it that way then God created through evolution.
