If not, how do you know they don't talk when humans are not looking like in "Barnyard Animals"?

Yeah I really doubt that they do cause humans would have eventually caught them.

Some animals have been known to mimic different human languages (including Dogs, birds and even elephants) but it's doubtful that they understand what they are saying. It is a very popular belief hat most animals do communicate with each other through sounds and gestures but it is not as sophisticated as human dialog. It's a nice thought though and thanks for the question.

Yes. Birds can talk, and monkeys have learned and communcated with sign language, but the latter was only a mimicking and no original communcation occurred during signing. Whales and dolphins are still trying to teach us humans how to communicate with them. Check out the video!:
