Rome, Copenhagen, Barcelona, Prague, Amsterdam, Brussels - just a few of the cities I have loved!
If you've never been to Rome I'd suggest you go there, I'm sure I don't need to tell you what to go and see as there are several well known places of interest. And if I remember right it shouldn't take too long to catch a train to Naples and then onto Sorrento - you could go there for a night and spend a relaxing day in the sun, maybe take a boat trip to Capri and have a swim in the Blue Grotto. Food and wine is of course excellent being Italy, but you must try their local liqueurs too and take home bottles of lemoncello for all your friends. Mine didn't thank me for it but I reckon it's OK!

The most interesting countries to visit in Eastern Europe are: Macedonia, Bosnia, Serbia, Kosovo Albania, Bulgaria, Romania. If you have time go further afield such as Ukraine, Russia, Kalmyk and Georgia. Kalmykia is very interesting because its in European Russia but its Buddhist and its people are of Mongolian origin. The architecture is similar to that of Tibet and China. It would be very interesting to go there. The city is called Elista. Look it up on Google! It would be best to go there by train or airplane. Bosnia is interesting too and much closer to Greece. Its partly Islamic country with lost of Asian Islamic architecture. Im sure you could visit all these places in 2 months if you spent 4 to 5 days in each place. But best not to visit two similar countries such as Ukraine and Serbia because they both are culturally similar choose just one of them Serbia or Ukraine of course you will get to see both if you have to travel through both. Try visiting the most contrasting places with interesting cultures.

My first instinct would be to say Salzburg, which can never disappoint. But if you want to go further off the overbeaten track and visit Krakow, which is one of the most amazing least-visited cities in Europe.

I would highly recomend Venice, In particular lido de jesolo. It is such and amazing place with an amazing amosphe, there are hundeds of little shops down side alleys, street artist and profomers.
The best place we visited in Venice was the Peggy Guggenheim collection, it houses hundreds of owe inpspiring mondern art pieces and is a tottaly unique collection.

Sibiu in Romania is a great place to visit during summer. surroundings are great, too AND it's not far from Bran, where you can visit Dracula's castle. Budapest is also a very beautiful city, i went there last august.

I'd say Paris...it's a short trip from the UK by plane, car or Eurostar train. It's a beautiful city, and has all the things you are looking for.
