When I'm leading my horse from the field to the stable he frequently puts his head on my shoulder, or blows in my ear. Does anyone know what this means? Is it a sign of affection, is he trying to eat me?

nope he's letting you know he's mad about you!
If you watch horses in their natural habitat - they communicate often by blowing at each others nostrils - in fact if you ever try and gently blow up hisnose - he'll probably acknowledge it and gently blow back at you!
I personally think the reason he may be blowing in your ear - is coz our ears are probably what resemble a horses nostril the most!!!!
Give him a big hug - he obviously feels very safe and comfortable with you!! Well done on being a great horse owner!!

I perceive it as affection, as mine has never tried to bite me. Though you should understand biting can also be affection. I remember once I was working on the fence and sitting on the ground. My horse was standing behind me watching and blowing on my neck when he decided to give me a love bite on the shoulder. It was not hard, but, startled me.
Reading some of the other answers, which are in fun, I do want to tell you. IF, your horse is a Stud you may want to be careful when a woman on her period. Mine would become excited around a woman during this time and it not a good thing. But, I was aware of this and usually ask a woman before she approached the horse. Never had any bad experiences though. It just something horse owners need to know and use common sense.

Putting his head on your shoulder is a big sign that he trusts you, a lot. It also is a sign of submission. You are his leader, and he is showing you that since he cannot talk. This is a very good sign, but if you don't want him to just give him a pat a gently push his nose away. Blowing on the other hand means that you are his friend. He is happy to see you, and content as well. Unless he starts biting, I wouldnt worry about it. If he nibbles, it's affection, but you might want to make him stop before it turns to biting.

he's a horse whisperer.

or on a more serious note
When a horse gently brings his head even slightly in your direction, it is affection and acknowledgement (unless you are holding a treat in your hand or pocket, then it is probably about the treat). The low, soft ‘nickering’ sounds they make at each other are other ways they show affection.

Aww thats really cute! It is definitely a sign of affection - give him a great big hug when he does it. I'm jealous - I want a horse that loves me! (I need to actually get a horse first.....)

Have you seen the film 'The horse whisperer'? Well when we're asleep all the animals meet up to associate and discuss religion, politics, the weather etc etc. They also watch films together. Some of their favourites are 'Human Farm', 'One flew over the humans nest' and most recently 'The human whisperer'. Soon you'll be doing exactly what your horse wants you to do. Please keep this knowledge quiet though because i told them i would keep it a secret and i don't want my head to be chopped off and put in my owners bed..

He certainly doesn't want to eat you! It is a sign of affection and respect in horses - he sees you as part of the 'in crowd'. I have known horses do this, also nibbling at you - especially when grooming - this is a sign of mutual respect.

The horse likes you. Blow up his nostrils and give him a big piece of carrot and some softmints. Horses love mints.

Hello

He is just checking that you have not been with anyone else, looking for lipstick, or snooker chalk.

Be careful that he doesnt find anything, as he will get very cross and take you for a ride that you will never forget
