If I'm lucky then it's landlocked salmon that I've just caught.
I keep the seasoning pretty simple, little bit of lemon juice, garlic powder, salt, pepper. The thing that really helps is that it's fresh.

Walleye fillets fried in beer batter w/ lemon-pepper seasoning. Unfortunately where I live now Walleye's are impossible to get. These days I go with Tilapia or Basa and sometimes Atlantic Salmon

Smoked haddock but I can't find it here in Georgia fried then add some half and half cream to make a gravy , eat with potatoes, yum. Now I have to choose salmon and rainbow trout. Fresh trout with lemon and boiled little new red potatoes.

blue trout or salmon hubby cooks so not sure what seasoning but i love fish full stop with almost any salads and vinegar for my lettuce on salad.

Smoked Salmon is really good. Martins fillet is really yummie to with lemon and boil pieces of potatoes.
