go to a technical school? learn from someone who already knows? pick out a book? buy an old junky car and dissect it?
I already have some basic engineering skills (mostly electrical, a bit of mechanical and a bit of civil), so I probably don't need to start from scratch.

Get in there and do it! Fill your head with as much knowledge as possible, especially since, at it's heart, all automotive knowledge can translate to every car on the road.
Personally, I learned by getting an old car and getting myself dirty. I grabbed a manual or two, read-up, and then went wrenching. If you want to pursue a career in automotive tech, then get into a school and become certified. Even if that's not what you want to do, but you have the time and money to blow...go anyways.
Also, you can always hit the internet. It's not so hands on, but if you pick a car, and hit a forum for it, you'll learn about all of the little intricacies that go with that make/model/year. It's neat to see what works and what doesn't over the years as well.
I think though, anyone you ask will always say...get into it and get yourself dirty.

A little of each school will teach you the Basics but they don't go far enough in to it a friend who knows is good if he knowes how to teach and not to do it for you the best is to get in and get your hands dirty
