Dragon Quest 8 is proably the best old-school RPG for either system on the PS2. Although not quite an RPG another game I recommend for the PS2 is Indigo Prophecy.

Final Fantasy VII, though it is an original playstation game. It's a great classic! Along with Final Fantasy: VIII, IX, X, X-2.

Fire Emblem: Path of Radiance is a great game for the 'Cube, if you don't mind some strategy with your RPG...
