Have them fill out a questionaire that will allow you to guage their personality, likes/dislikes, and whatever other factors you might need. The questionaire will tell you everything but their sign, birthdate, or any information informing you of when they were born.
Next, find as many astrologists as you can find and have them go over the questionaires and they have to label the sign of the person based upon the data given. You will have a hard time finding anyone who can get better than a 10% success rate.

I read a study once. The researcher took 100 people who all had a greatly detailed psych workup done (all those official tests taken to show exactly what kind of person you are). The researcher also had available to him the exact birth -date, -time and -location of each of the subjects. These profiles were given to a group of master astrologers and the astrolgers were asked, on the basis of these profiles to assign them to one of the 12 zodiacal signs.

The results were telling. The astrologers got about 1 in 12 right.
