The carbonation wouldn't do anything. If the drink is acidic it will certanily tenderize the meat since the acid will react with certain parts of muscle, but it won't dissolve since not all of it reacts. Over a really long amount of time the meat would fall apart just as it would in water. The amount of tenderizing would also depend on the type of drink, colas have phosphoric acid, while Sprite has citric acid. These react with the meat differently. Also what needs to be taken into consideration is if the meat has a high percentage of fat. Nothing will happen to the fat (it is insoluble in water based solutions), I believe.

doesn't the acid and chemicals in the soda eat away at the meat. I think this has already been proven.
