I haven't been in many actual swordfights (play ones, I mean) but the few where I've had enough room to maneuver my partner and I circle one another. I'm sure if I duelled enough I'd be able to identify my reasons, but for now it just escapes me.

Constant movement helps you determine your opponents skill level and aids in finding openings of attack. It can also help keep your opponent off-balance and perhaps give you a lighting/environmental advantage.

Because it allows movement without having to make the first move.
