You need to know if they know what "rotate" means (first in, first out) This includes non-food items as well. I usually ask if they know what the most important and basic rule of food handling is. Ask about honesty, dependability, and food handling hygiene.
Ask them to rate on a scale of 10
1) their customer service skills
2) their cash handling skills
3) their punctuality and attendance

Ask them if they like to work independently or as part of a team. Ideally, they should like both. Are they physically able to stand and lift. No health concerns? Have they taken any food handling courses? Any plans in the near future that may affect employment? (vacations, hospital stays, etc.) Ask about their hours of availability and if they are looking for full-tome or part-time. Also, are they looking for a long term permanent position. What they expect as a starting wage.

You should be able to get a pretty good idea of how well they would do by asking these types of questions.

Good luck!
