The general consensus here is "protecting the heart", but here's another reason why. Since vampires are thought to be able to transform into bats, which sleep upside down with their wings enveloping or folded across their bodies, vampires also sleep this way. (In fact, the bones in a bat’s wing are similar to those in human arms and hands.)
I also sleep in that position sometimes, especially when I can't get to sleep, and it IS comfortable. We must be batty, hey!
Addenda: The wife came up with something too. Since some cultures believe that the heart contain the soul, or "life energy", that allows them immortality. Vampires cross their arms thus to protect the soul as well as the heart. She also says that if a vampire's arms are moved, while in the coffin, for the stake to be driven through, it will awaken the vampire. Hence the method of decapitation for killing a vampire, which is the only "true" way of doing so. It's believed that even if a stake is driven through the heart, the vampire is unable to move until the stake is taken out and the "life energy" can return to the heart.

You can only kill a vampire by driving a wooden stake through his heart. His arms crossed over his chest was a way of protecting his heart from being pierced by the wooden stake during sleep.
