We used to just triangulate for how high we shot our model rockets, it is cheap and easy. Measure a baseline from where you are to where your rocket launches from. With a protractor, and a piece of plastic or cardboard for a sight, measure the angle to the highest point your rocket goes. Just be sure to stand a fair distance back, So you are not working with extreme angles and you should be able to figure the altitude.

Height can be calculated with a compass from measured distance from the launch pad. use the degrees of the height and the measured distance to calculate. Its a triangle thing.
