There's a million different strategies you can do to win, depending on what your civ is, the level you're playing, and what civs you're playing against.

Go to CivFanatics. They offer tutorials, strategy guides, and a forum. Many of the people there are hardcore players but are really cool and helpful. I've printed out so many tutorials and guides there that I keep them in a folder.

I personally like the "kill everyone" route since I like to plan wars. I just invade the weakest or nearest civ and erase them from the earth. I like to use artillery. Lots and lots of it.

Play a commercial/scientific nation, build lots of roads, build cities on rivers, and adjust your tax rates, make scientists in your cities, etc.
