Now - a - days, you really shouldn't be too worried about all this stuff. Its fairly simple.

Use a star topology, using cat5 utp cable. I would use a varient of linux as your server just to keep costs down, but windows 2003 server is an excelent choice - very stable and easy to customise.

There is no best topology either. It is all a case of what is best for your situation.For your environment either star, or a composite star bus network is great.
