My guess is that children wanted to garner favor from their teachers. They looked into their lunch pails and came up with apples.

Many times, in especially rural areas, the town didn't have the financial funds to pay a teacher a salary in money. Teachers were paid with barter from many town sources. Kids would also bring the apples or other foods (usually things with long shelf life) to supplement her wages. there were male teachers throughout history, but many felt the males could "fein for themselves" even take on a part time employement to earn there way. That's why it was usually a supplement for the female teachers.

In the 1800s only females were allowed to be teachers. They weren't paid well, if at all. Kids brought in apples and sometimes other food to help the teacher make ends meet.

About the same time coffee was invented. Seems little Johnny discovered way back when that if he could get teacher to eat an apple he wouldnt have to suffer thru her coffee breath while she helped him with vowels.
