I bought some land a while back and I've got the deeds, but since then I moved house. I'm not sure what will happen now as far as tax is concerned. Do you get mailed something automatically? And if so, I should get my address changed on those deeds asap, right?

I can only speak for Texas, but once a year here, and actually twice a year in California. Texas is due at the end of the year, usually a bill will get to your house around Thanksgiving. Just be sure they have your address (in any state) so you don't find a surprise lein on your property.
