meet them in person, and start out with a conpliment, and explain to them how much you could learn from them and why you want to shadow them

You wouldn't find many doctors who answer their own email. Your request is most likely to go into Trash Bin through their assistants.

The best approach is to get introduced to them. The second best option is to visit their offices.
