They get cash, but keep in mind that there is a lot of editing of the show before it goes on the air. The contestants do not know what they are getting in to when they get in the cab. The lights go off and Bill Bailey tells them they can participate in a game show. Then they cut out a lot of explaining of the rules and they give the participant an opportunity to back out of the game. The participants also have to fill out forms and show ID to the producers. I would also imagine that they do a quick background check to make sure the participant is not a criminal or undocumented resident. Since the producers have the player's info, they are also responsible for paying taxes on their winnings. The winnings need to be claimed.

Any winner of money, car's, refrigerators, etc: has to pay taxes..you have among the many; luxury tax, state, federal, excise, etc...cant get away from it...
