The reason there are so many is that Greek is an ancient language and one of those from which English evolved.

If you are curious about the source of words, consult any good dictionary. Before the definition will be the source.
As languages develop they use words and meanings from cultures that they are in contact with. This is no different than Arabic using the word "television", or South Koreans using the word "beer" in conversation.
