Right i have to research how to look after vitamins in food (by carefull preperation, to reduce their losses). I have to research that somewhere, just seeing if anybody knows of/can reccomend any good sites?

Aw, come on!
How hard is it to set up a search for 'vitamin loss' and 'freezing', for instance?
This one I picked out for you is just the tip of the iceberg.

Another snippet is that chopping carrots into matchsticks means they lose less vitamins in the cooking water than if they are cut into discs. You can always make gravy with the water.
Also beware! Vitamins may be lost, but not minerals!
