I would write a 1500 word essay on the health topic of Sleep deprivation. You can explore the recommended amount of sleep and do a mini exercise (for the essay) where you 'do a diary' having different hours of sleep. So 8hrs (is the usual recommended) then do 12, 6, 4.. and if your up for it no sleep? You can set yourself tasks to do after each night like Reaction times, mental maths, and rate your mood etc.. You would need to do one night on and one off so not to build up too many nights of less sleep, to make the results fair.

If this is a junior high or high school project, I suggest you write about any topic you know about. Otherwise, you need to be more specific on what areas it is to be about.
Write about your dog, cat, bird, friend, cousin, uncle, aunt, brother, sister, home, anything around you.
I once wrote and essay about how to use the phone book in my first year at college, and my instructor considered it the best and read it aloud to our class as an example.
