I have seen some really cool castles made out of sugar cubes and Elmer's glue. I am not sure how big you want the castle but sugars cubes and art glue are cheap and easy. Just make sure you have a strong base like a quarter inch think piece of wood to mount it on. Toothpicks work too but, that is a lot harder than stacking sugar cubes on top of one another. Sounds like fun. Good luck.
