There is no simple conversion between the two. Oh, but there is so much more. First, metal plate is not measured in gauge. By deifnition, plate is measued in thickness (1/4 - inch, 3/16 - inch) while sheet (usually thinner than plate) is measured in gauge. There are a bunch of gauges used. There is American Steel & Wire, Birmingham & Stubs, Stub's Steel Wire, Trenton Iron, British Imperial, and U.S. Standard. The US standard is most common for metal sheet.
The reason I say there is no simple conversion is that 11 gauge is 0.125" and 16 gauge is 0.0625" so it looks like there are 5 gauges per 1/16" or 0.0125 per gauge. However, 10 gauge is 0.1406" thick so it is 0.0156" thicker than 11 gauge, not the expected 0.1375" for a linear relation.
The only real pattern is that between 1 gauge and 14 gauge the difference in thickness between each gauge number is close to (but not precisely) 0.0157".
The best way to find a gauge thickness is to look it up somwhere like Machinery's Handbook.
Wire gauges are not so bad. The American Wire Gauge (AWG) is geometric, each larger gauge is 2^(1/6) times the diameter of the previous and a 10 gauge wire is 0.1" in diameter and for copper has 1 ohm per 1000 feet. All nice and neat to figure. Unfortunately, metal sheet is nowhere near that simple.

As you already probably know, the word "gauge" can mean different things when you are measuring steel, wire, or any other number of things.
When you say plate, if you mean plastic plate, then 1 ga = =.001 inches (or one micro inch), a "mil"
You can convert that to millimeters = .0254 mm
If it is a steel plate, then 1 ga = .01345 inches which is .3416 mm
