In the first sentence, you can insert commas to isolate the word 'also' if it is not essential to the meaning of the sentence. So the first sentence can be written as follows:
He, also, showed a lot of courage and determination.
However, It all depends on the meaning of the sentence since the use of the word 'also' can lead to ambiguity. Did he show courage and determination in addition to other qualities? Or did he show courage and determination together with someone else? The use of commas here can affect the meaning.
In the second sentence, the word 'also' is clearly non-essential. It adds nothing to the sentence. It can be removed and the meaning of the sentence would not change. Commas should therefore be inserted before and after 'also'. The sentence should properly read:
They would say that I follow directions very well and, also, that I am a very hard worker.
Note that I would not put a comma after 'well'. This is because it is an abuse to put a comma between two noun clauses in a compound object.

You don't NEED it neccesarily, but putting in a comma in the following sentence would make it more aesthetic and easier to read.
2) They would say that I follow directions very well, and also that I am a very hard worker.
Right after the word "well."

No you don't ! The first sentence has a co-ordinator "AND" .. and the second has 2 co-rodinating conjunctions - "THAT" And "AND" which don't make the sentence need the commas ..

According to me, you don't need any commas in both sentences that you have mentioned. I think both sentences have already true. Good luck!
