My highschool doesn't have any history class for freshman, making only 3 years of history total, and NYU was a school I was looking into. I read on CollegeBoard.com that they require 4 years of history. Will this stop me from getting in? It's not like there was anything I could do about it....

No. There's no hard requirements of this sort and I'm sure you wouldn't be dinged for not taking what your school does not offer! From the NYU Admissions Website:

Since our applicants come from a broad range of high schools from around the United States and many foreign countries, it is difficult to recommend a single course of study that would maximize your chances of admission. However, we would expect your preparation to include the following: four years of English with a heavy emphasis on writing, 3-4 years of history/social studies, 3-4 years of mathematics, 3-4 years of a laboratory science, and 2-3 years of a foreign language.
