Yes in the south people overseed with rye that stays green all winter while their warm weather grass is dormant (brown). In the spring before the warm season grass wakes youn may need to kill the rye with a herbicide to keep the two from competing.

In California Central Valley, bermuda grass lawns can go all brown in the Winter. I have seen people rake dead thatch heavily then seed them with ANNUAL rye to get some green in Winter. In Summer the bermuda comes right back.

The attached link talks about winter kill of centipede grass. I think they would just suggest reseeding the centipede grass in the Spring. Both bermuda and centipede grasses spread by stolen growth.
