maybe because there is no middle ground in either of those subjects. You either believe one way or the other. In the case of religion, it's usually how you were raised which reinforces your beliefs, but with sex, it's usually gender related.
like one of the other answerers, politics also may fall into this category, although probably more subjective than sex or religion.

I think because they cover the most intimate, primal parts of human culture and society. That is why they are such sensitive topics.

I thought it was politics and religion. Sex is just an outshoot of either of those topics. LOL ;)
