I don't understand, whether it be a John Williams or someone at ones community college...the notes are all the same. So what is the difference between leaders?

Different conductors have different ways of interpreting the music. Also some conductors are better at signaling different sections when it's their turn to start playing, or when they should bring out their part of the music. Often times, the conductor also decides the seating arrangements and who should get solo parts. Some conductors are just better at selecting better music for their orchestra, as well as getting the best out of their musicians

there are definatly differences the way a composer does it for example the exact timeing and volumes on the paper are not allways the same. the composer actually controls the volume and cut offs. try this get a CD composed by and conducted by John Williams. Then get the same music but not conducted by williams you will here the difference.

The difference is in the Nuances and the Tempo and the volume.
By the way - the individual to whom you refer is The Conductor.
The Leader is the First Violin.
