If I have Motherboard that has the options of using DDR 400/333/266. (I know this is RAM, Im not completely lost when it comes to this but need assistance when building from scratch), Is there a difference between the three of these or not really, if there is,what? And can you suggest a good brand of Ram?

The number is the speed of the memory. The higher the number, the faster the memory, the better the performace. Go with the best your motherboard can support/that you can afford.
