Because they have cell membranes, which do the same things as cell walls.

Because in plants, they have no skeletal structure, and need the solidity of the cells wrapped in cell walls to be able to stand upright.

They do, it stops all the contents spilling out. They do not have the thick cell walls found in plants though. I would imagine because we are not reliant on water to stop us wilting.
