It's a "Guest Check," like a bill. You get a reciept after you pay. There's a restaurant in Japan that sends you a bill in the mail the next day; they don't want to ruin the beauty of a meal with talk of money.

You might not be old enough to remember, but there was a time when waitresses/waiters carried a green pad to write your order on and at the top it said "Check".

old habit. Some people pretend they are writing in the air to ask for their check, also. This is even more outdated since touch screens and printers have made their way to restaurants!

because they haven't paid yet, that's why it is called a check. but once it is paid, it becomes a receipt.
