Some do have 2 some 4 some 1. Depends on different things. Rover and BMW for instance use 4 cats on their V8 motors mostly for space. The size of a single cat for each side is to big so they use two smaller ones.

what kind of car are you talking about?
some are what is called a pre-cat and a post cat
pre cats heat the exhaust system to help the post or main cat "light off" faster to clean emissions
