It looks as if I'm going to be the only one to say soil. My lucky bamboo started to rot in the water so I planted it in a self draining pot in potting soil. The bamboo has never looked better. Now it is a nice emerald green color instead of the pale unhealthy green it used to be. The bamboo doesn't grow any faster in the soil than it does in the water and is very simple to care for. Leave it in bright indirect light and water only when the soil starts to really dry out. I only fertilize every few months. It is actually easier to take care of than when it was in the water as well. The water would need changed often and the bamboo would drink it, or evaporation, would make it necessary to constantly check it to make sure its full. An added bonus is there are so many pots to choose from and they can be planted in all sorts of patterns or designs in the soil. Best Of Luck!!!

Yes, you do not need dirt to grow bamboo. Mine is in a large glass vase with rocks filling about a quarter of it. The stink is probably due to algae and bacteria growing on the rocks/ roots, etc. Having bamboo is kind of like a fish tank. You need to wash out the water and clean everything once in a while or else it'll get stinky and dirty.

Bamboo spreads like crazy. It is an intrusive weed so only put it in something you can rip it out of - rocks and water sounds easier.

It depends on the Species of Bamboo, but most bamboo is very hardy and will grow in a variety of mediums and soil types. Best indication is what they were growing in when you brought them.
If they are in potting mix, then chances are they will do well in a well drained soil.
