You can, but you will have to go from Canterbury West and change at Tonbridge for London Bridge. It will take you between 1.34 hours and 1.37 hours.

Trains from both Caterbury East and Canterbury West go directly to London Bridge

I would think all London bound trains go through London Bridge before they split to other London stations.
