Reincarnation is explained in Details in Bhagavad Gita.
The Fundamental behind this is that we are not this Temporary Body but Sprit Soul.
God Says – “As the embodied soul continuously passes, in this body, from boyhood to youth to old age, the soul similarly passes into another body at death. A sober person is not bewildered by such a change” 2.13.
“That which pervades the entire body you should know to be indestructible. No one is able to destroy that imperishable soul.” 2.17
“As a person puts on new garments, giving up old ones, the soul similarly accepts new material bodies, giving up the old and useless ones.” 2.22
This Changing of Body is called Reincarnation.
Your Comment that “if Adam and Eve would have reincarnated then they would be the only person on Earth” is Not Accepted. All the Souls including God exists Eternally.
God says “Never was there a time when I did not exist, nor you, nor all these kings; nor in the future shall any of us cease to be.”2.12. It is Further Explained
“All created beings are un-manifest in their beginning, manifest in their interim state, and un-manifest again when annihilated.” 2.28.
So it is clear that when Adam and Eve where Manifest, at that time all of us where still existing, but in Un-Manifest State. As Time passed we manifest on this planet and then as time will pass we will again un-manifest.

There is evidence of [reincarnation] in Jewish thought, apart from Kabbalah, which dates to the time of Rome. According to the Antiquity of the Jews, Book 18, Chapter 1, Number 3, "[The Pharisees] believed that souls have immortal vigor in them [and that the virtuous] shall have power to revive and live again...." (Head, Cranston, Reincarnation, p.26).
The bracketed statements are not necessarily in the original statement, and may be implied understanding of the editors of the text. If you drop the bracketed statements the statement reads something more general: "A sect of Jews from Antiquity, believed that souls have immortal vigor in them, and shall have power to revive and live again...."
This is Jewish understanding from the same era as Jesus Christ (Y'shua). According to Philo Judoeus (20 B.C.E to 54 C.E.), "The air is full of souls; those nearest to earth descending to tied to mortal bodies return to other bodies, desiring to live in them." Flavius Joshep (37 - 100 C.E.), Jewish historian, addressing Jewish troops during the final days of Israeli existence under Rome, says, "Do you not remember that all pure Spirits when they depart out of this life obtain a most holy place in heaven, from whence, in the revelation of ages, they are again sent into pure bodies" (Head, Cranston, Reincarnation, p. 27).
The Zohar, the Book of Splendor, says, "The souls must reenter the absolute substance whence they have emerged. But to accomplish this end they must develop all perfections, the germ of which is planted in them; and if they have not fulfilled this condition during one life, they must commence another, a third, and so forth, until they acquire the condition which fits them for reunion with God" (Head, Cranston, Reincarnation, p. 29).
Adam and Eve are metaphoric.

Not necessarily. After all, they had children who had children who had children, and so on and so on. And Adam and Eve died after having lots of children. So, how do you figure that they would be the only people to exist on this earth if they reincarnated? Am I misunderstanding something?

yes, i do believe in reincarnation...and no, you are wrong about, if this is the case, adam and eve being the only two sould on earth. other souls could have stepped in later. i don't buy into the whole 'adam and eve' thing, though.

There have been a lot of proofs that there is reincarnation after death, so I definitely believe it is true.
The classic form of the reincarnation doctrine was formulated in India, but certainly not earlier than the 9th century BC, when the Brahmana writings were composed. After the Upanishads (7th to 5th century BC) clearly defined the concept, it was adopted by the other important Eastern religions which originated in India, Buddhism and Jainism. Due to the spreading of Buddhism, reincarnation was later adapted in Chinese Taoism, but not earlier than the 3rd century BC.
Many people who accept reincarnation in the West today claim that it can be scientifically proven. They usually ground their belief on so-called past life recall experiences, which represent the ability of certain persons to recall facts of alleged previous lives. There are two categories of this phenomenon. One is observed under hypnosis, while regressing certain persons beyond the date of birth. The other is produced by some children who spontaneously remember a previous life identity, amazing their neighbors with specific details that match with the life of a deceased person. Could these experiences really be proofs for reincarnation?
A. Hypnotic Regression
Hypnotic regression started to be used as a "past lives recall" method in 1952, when Ruth Simmons from Colorado, USA, was regressed "back in time" beyond the date of her birth. Suddenly she started to talk using a specific Irish accent, claiming that her name was Bridey Murphy and she lived in Ireland in the year 1890. Her brief descriptions seemed to describe properly the Irish society of the late 19th century. It was therefore believed that a scientific proof for reincarnation had been found.
B.Spontaneous past life recall by children as proof for reincarnation
The cases of the Indian girls Swarnlata and Shanti Devi are two of the most famous. At the ages of 3 (Swarnlata) and 4 (Shanti Devi) they both started to claim that they had lived a previous life as wives and mothers of two children, in a distant village. The most astounding element is that they mentioned specific facts about their alleged previous lives that have been verified by investigators. Imagine how surprised the sons of the deceased mother were when visited by a 4-year-old girl that claimed to be their mother (or other relatives in similar cases).
Today’s religious syncretism not only accepts reincarnation as one of its basic doctrines but also tries to prove that it can be found in the Bible and in the history of the Church.
Biblical texts that seem to imply reincarnation
The most "convincing" texts of this kind are the following:
1) Matthew 11,14 and 17,12-13, concerning the identity of John the Baptist;
2) John 9,2, "Who sinned, this man or his parents, that he was born blind?";
3) John 3,3, "No one can see the kingdom of God unless he is born again";
4) James 3,6, "the wheel of nature";
5) Galatians 6,7, "A man reaps what he sows".
6) Matthew 26,52, ”all who draw the sword will die by the sword”.
7) Revelation 13,10, ”If anyone is to go into captivity, into captivity he will go. If anyone is to be killed with the sword, with the sword he will be killed.”
You decide. Goodluck!

No but the thinking goes that souls that have lived in the past are reincarnated and new souls are created to account for population growth....
I don't believe in it but it is a cool fantasy... also makes for some pretty decent movie plots...

No, I do not believe in reincarnation.
The essence of who we are is in our thoughts, and our thoughts are the product of physical processes in the brain. So, when our physical brain is gone, then the essence of who we are is gone as well. The notion that our thinking selves can somehow "live on" after death (whether it be in heaven or in reincarnation) would require that our thoughts can temporarily exist somewhere without a physical brain, which I don't believe is true.
