get the largest tub you can ( sad to say there is no consistency in the ratings ) this gives you the ability to do that quilt or whatever and the less crowded the tub the better the wash ( same with the dryer ) since you have variable fill levels this will not cost you any more energy and the dryer will actually be more efficient on the auto dry setting ( the more airflow the faster the drying time )

Do you want to wash comforters? What size? Do you procrastinate on laundry and do it all at once or do you do several small loads throughout the week? I would recommend a large-front loading machine if this is the case. Not only can you wash more clothes, but you save water and energy and your clothes experience less wear and tear. Keep in mind, you need a big dryer if you do big loads because they need more room for clothes to tumble around. This prevents the heating element from burning out and the clothes dry faster and more evenly.

measure the space you have in your laundry room and buy according to the area you have available.

If space isn't a problem the buy according to the needs of your family.... if you have lots of clothing and comforters to wash then buy the larger size washer and dryer.

I'd go for the biggest I could get but try to find one with a setting for doing smaller loads. That way you could wash your delicates without wasting water.
