Three Wise Men dueling arena.
Scare the children and have a guy in a red suit hide somewhere nearby told to jump out when someone says they don't believe in Santa.
Candy Cane horseshoes.
Have a music video you made yourself using clips from a Santa movie to something like Jingle Bells constantly looping on a tv n the background. People will see it and go over then you can say what your stall does.
The coal stall. Give out coal. Anyone willing to come over gets a prize instead lol.

I did a treasure island hunt - a big sheet of blue card split into a grid and then an 'island' which they had to decide where in the sea it was placed. Each square could only be used once (so I did quite a few - but then the card covered the whole table) and whoever was closest/exact got the treasure (a chest of chocolate money and jewel-like sweets with some kiddy jewellery thrown in.

The children could make their own christmas cards and sell them at a stall, or plaster of paris snow scenes with glitter, just a couple of suggestions

Name that baby - get teachers and support staff to bring in a phot of when they were a baby and a recent picture, and the object of the game is to correctly identify who's picture goes with the baby photo.
or
ask the children to donate tinned food or toileteries so you can sell them on at a discounted price
or
buy a load of cheap tattoos and charge say 50p - 75p to get a tattoo done.

Put smarties in a jar and the person who guess the correct or nearest to the amount wins the sweets or you could use alternative sweets or dried fruit and charge 10p a guess.
