there are lots of different forms of reactive oxygen that can oxidize different molecule. Oxygen scavengers inactive those active form of oxygen by a permanent reaction.
I don't know exactly but I can imagine oils which consist of fatty acids and glycerol can be oxidize and goes bad so they need an environment free of reactive oxygen species.
