Harsh - one sign of that were the press gangs. You might go away for a year, or two, or more. You might sink, catch any number of diseases including scurvy (which the Brits....Limeys - carried limes to counteract).
If you go back further you'd be sailing away from home, with no real map, just undiscovered country. If you were lucky you might by chance find a small piece of land, like The Americas. But how on earth did the early travellers find places like Hawaii, Midway or Tahiti ?

Really bad, very short life spans. Scurvy was a common ailment becuase they did not have adequate nutrition; also severe wind and sunburn; injuries from falling from rigging or other accidents killed many. They had no advance notice of storms, so many died from being swept overboard or drowned with the ship.

It's the same as today. They pull into port, go to libraries, museums, and go sightseeing.
