This question goes with "how does the family afford to feed a 50-foot pooch?" I think they have the same answer. Obviously Clifford is a freakish mutant. It's only reasonable to assume that he has other aberrations besides size and color. I say that he must also have some sort of super-efficient digestive system. His stomach must extract nutrients so thoroughly that there is no waste product left. This total efficiency digestion would also mean that he would need far less food than one would expect for his mass.
Or, it could be a kids book.

Well once he takes a dump. They call in a bulldozer and shovel it into trucks. It is then shipped to farmers in California where they use it to fertilize spinach and lettuce. Which is then sent to your local supermarket for consumption. I'm sorry you had to learn about it this way. But the truth has to be told.
