try a full system radiator flush...you may have an issue of plugging in the heater core..........

heat gage goes hot then drops back to normal>>>>

the thermostat's fine. you need to clear up that air lock. the heater core's higher than the radiator. if you drained coolant to change your thermostat and then filled it back up, you could have trapped an air bubble in there.

remove one of the hoses to the heater core while the engine's running to let out some of the air.

Still sounds like you have an air pocket in the cooling system. Make sure that your radiator isnt clogged either. Would cause same symptoms. You may also have a defective T-Stat too. Make sure that you didnt install it upside down either. Backflush the cooling system, you may have sediment in the core too. Make sure the heater control valve is working properly too.
good luck.........

IF NO MORE AIR LOCKS HEATERCOER IS BAD EVEN THOUGH THEY DONT LEAK THEY GET PLUGGED ON THE INSIDE YOU CAN TRY FLUSHING IT BUT BEST TO JUST CHANGE IT YOU HAVE TO PULL THE DASH BACK TO GET TO IT IVE SEEN THE PROBLEM A LOT AND CHANGED QUITE A FEW GOOD HEAT AFTER EVERY TIME
