If I were to strike up a conversation with a man a few years my senior... what topic should I bring up?? If you were a mid 30's man, what would you find easy to talk about with a woman that you don't know very well?

Sports is always a good one, especially if you can learn his favorite team. Current events, jobs, and things of local interest are good.....music, movies, and places to eat, are good topics.

it all depends on what his interests are
what he is interested in, people don't usually class their interests by their age like "i am 34 this year so i should be interested in football, when i turn 35 i will be interested in basketball"
find out what he likes and talk to him, start up a conversation about anything
