For example, a one carat round diamond. I am trying to price out what my inherited e-ring would have cost back when it was new.

A one karat was around $500. But don't think of a diamond as a good investment. You have to buy retail, and there is a tremendous markup, then you sell wholesale! If you want to invest in diamonds the best way is to buy stock in De beers. The artificial diamonds look so real now, why spend the money for a real one? No one will know but you!
