I'd go a bit against the grain here & pick "Piece of My Heart". The reason is that I think it hits closer to the primal emotions of love & angst than the others. "Respect" was sung by a great soul singer but really isn't her most soulful song, though it was a big mainstream hit and addresses a different relationship issue in a soulful way. "All Along the Watchtower" is far & away the least soulful of the 3, even though it's a great song, as it really doesn't deal with any kind of primal emotion -it's kind of a narrative story.

all along the watchtower by Hendrix..has undoubtedly the most soul out of the songs which you mentioned..Respect is too commercial,and geared towards mainstream. Piece of my heart sounds like it was whittled down to make it to top 40 type music.

They are all so different. Soul is multifaceted and relative. These three songs are living immortalized proof.
Peace of my heart is gut wrenching... but isn't really soul at all, if anything its a combination of Rock & Roll and blues...
Watchtower... is Rock & Roll that was dictated (so to speak) by a man that was rooted and grounded in the soul and blues chords, scales and style. But unique in the way it was executed and played... Leftie and upside down but still and always rock & Roll.
Respect was the only one you mentioned that actually was soul catagorically, but I don't think as songs go, it is the best of the three. I actually think its the least of these...
