The dove with the olive branch is one of the most prominent symbols. There are also the pairs of animals as well as the altar that Noah built after the flood was over! :-D

When the flood was over, Noah sent out a dove to check for dry land, and it returned with an olive branch in it's mouth, telling Noah the water had receded.

Try animals in pairs. You don't have to blantant about it--just make sure you have two of everything in your piece. Heck, you could probably ditch the animals and do pairs of other things if you want to be really subtle.
