If you expand it to modern-day fairy tales, Enchantment by Orson Scott Card is a great modern-day version of Sleeping Beauty. And if you expand it to be novelizations of fairy tales in general, (rather set in the past or present) then Ella Enchanted by Gail Carson Levine, Beast by Donna Jo Napoli, Spindle's End by Robin McKinley, or Confessions of an Ugly Stepsister by Gregory Maguire come to mind.
Here is a great website you should explore at length:

Ella Enchanted. She saves herself, country, and prince. Her prince named Charmont called Char. Modern day idea of a woman saving the day without dropping a hanky.

It's not exactly modern, it was written in the 1940's but, Crimson Roses by Grace Livingston Hill is pretty good. It's one of my favorite romances. It's more of the sweet and innocent kind instead of the steamy tawdry kind.

Not a modern setting, but a good read nonetheless. "Ever After" by Rebecca...somebody. It's been awhile, but she mixes all sorts of popular fairy tales into one fabulous novel.

You should check out the Princess Diaries series. The movies are pretty good and I think you would enjoy the books. Also, check out Ella Enchanted.
