When an Englishman and a Canadian marry, can they both take their partner's nationality? And if so, how does this happen?

Yes, you can be a dual citizen. Canada and Britain don't have the same rules as the US (in the US, you can only one or the other, not both). Talk to an immigration lawyer. They can answer all your questions.

How do I know this? I'm immigrating my husband to Canada and I'm a Canadian citizen. I know how these things work.

you can both become citizens of each others country but as to nationality you will always be what you were born as.
When your children are born they would be natives of whatever country they were born in with an ethnic background of English and Canadian.
